Aztec Quinoa

Description

This one pot meal makes dinner preparation quick and easy. It also makes a wonderful filling for a taco dinner or a salad style burrito bowl.


Ingredients

  • 4 cloves garlic, minced
  • 1 jalapeno or poblano pepper, small diced (poblano peppers are milder than jalapeno peppers)
  • 1 red bell pepper, diced
  • 1 red onion, diced
  • 1 cup quinoa, any variety you choose
  • 1 cup vegetable broth, low sodium
  • 1-15 ounce can diced tomatoes
  • 1 cup frozen corn
  • 1-15 ounce can black beans, drained and rinsed
  • 1/2 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/4 cup lime juice
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped

Instructions

  1. Place all the ingredients in a pot and bring to a boil. Turn the heat down to medium-low and simmer until quinoa is cooked through, about 15-20 minutes.
  2. Top with avocado and cilantro.

Notes

This quinoa is a great filling addition to tacos or burrito bowls. I like to fill a burrito bowl with greens and top it with Aztec quinoa, salsa, and lots of avocados or guacamole. You can also substitute the quinoa for ¾ cup of instant brown rice and 1 ½ cups of vegetable broth.
