Description
This one pot meal makes dinner preparation quick and easy. It also makes a wonderful filling for a taco dinner or a salad style burrito bowl.

- 4 cloves garlic, minced
- 1 jalapeno or poblano pepper, small diced (poblano peppers are milder than jalapeno peppers)
- 1 red bell pepper, diced
- 1 red onion, diced
- 1 cup quinoa, any variety you choose
- 1 cup vegetable broth, low sodium
- 1-15 ounce can diced tomatoes
- 1 cup frozen corn
- 1-15 ounce can black beans, drained and rinsed
- 1/2 teaspoon cumin
- 1 teaspoon chili powder
- 1/4 cup lime juice
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper
- 1 avocado, diced
- 1/4 cup cilantro, chopped
Instructions
- Place all the ingredients in a pot and bring to a boil. Turn the heat down to medium-low and simmer until quinoa is cooked through, about 15-20 minutes.
- Top with avocado and cilantro.
Notes
This quinoa is a great filling addition to tacos or burrito bowls. I like to fill a burrito bowl with greens and top it with Aztec quinoa, salsa, and lots of avocados or guacamole. You can also substitute the quinoa for ¾ cup of instant brown rice and 1 ½ cups of vegetable broth.
