- 1 1/2 cups rolled oats (not instant)
- 1/2 cup walnuts
- 10 dates, pitted
- 1/2 cup unsweetened coconut flakes
- 2 tablespoons flax meal
- 1/4 cup unsweetened cocoa powder
- 1/2 cup all-natural peanut butter
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 cup vegan chocolate chips
- 2 tablespoons unsweetened applesauce
Instructions
- Place the oats, walnuts, dates, coconut flakes, flax meal, cocoa powder, peanut butter, vanilla, and salt into a food processor and process until crumbly and slightly moist. Add the remaining ingredients and process until a sticky dough forms that can be rolled into small balls. Add more applesauce (1 tablespoon at a time) if the mixture is too dry and doesn’t stick together.
- Remove the dough from the processor and form into small balls. Store in an airtight container that keeps refrigerated for up to a week. For longer storage, freezing works beautifully.
