You’ll arrive Sunday afternoon for a group dinner, setting the stage for your transformative experience.

Each morning you’ll engage in informative sessions led by Nelson Campbell. He’ll share the health benefits of plant-based nutrition and the story of his father (famous researcher, Dr. T. Colin Campbell), and facilitate discussion about the challenges of making and sustaining lifestyle change, which includes food but within a more wholistic view of health that will make your lifestyle change deeper and more sustainable.

Acclaimed chef and cookbook author Kim Campbell will provide daily culinary instruction and then guide you as you prepare some of the dishes you’ll be enjoying. She’ll also provide instruction on a take-home food strategy. You’ll even assemble some meal components you can take home with you, which, along with other information and guidance, will help you sustain a plant-based lifestyle that is delicious and joyful.

Along with instruction, you’ll have time for walks around the small mountain town of Saluda and for other local excursions. After each full day, you’ll ease into your evenings in a relaxed atmosphere, socializing and making new friends. We’ll also lead an activity toward the end of the program that will help you see your health in a broader, more empowering way.

The small group atmosphere of the immersion will provide opportunities for group participation and dialogue throughout. As you hear other people’s stories and share your own, you’ll quickly form friendships that endure long after you go home. This human connection may be what you remember most from this transformative program.
