Whipped to cloud-like perfection with melted dark chocolate and a splash of maple syrup, it’s decadent enough for date night but easy enough for Tuesday night.

- 16 ounces silken soft tofu
- 3 tablespoons pure maple syrup (more or less depending in how sweet you prefer it)
- 3 tablespoons cocoa powder
- 1 teaspoon pure vanilla
- 1/4 teaspoon salt
- 5 ounces dairy free dark chocolate (or semisweet vegan chocolate chips)
Instructions
- Place the tofu, maple syrup, cocoa powder, vanilla, and salt into a food processor and process until smooth and silky.
- Place the dark chocolate into a separate small bowl and microwave in 30 second increments, stirring in between, until the chocolate melts. Pour the melted chocolate into the food processor and process again to incorporate the melted chocolate. Taste and adjust sweetness to what you prefer.
- Place the mousse into your favorite parfait cups and refrigerate 2-3 hours and serve topped with fresh fruit.
