Walnut Pesto

This pesto works great tossed in a pasta, as a sauce for pizza, or even as a sandwich spread.  The walnuts and nutritional yeast give it that perfect creamy, cheesy flavor. We’ve found that a blend of basil and spinach is an inexpensive alternative during the off-season, but you can certainly use all basil.

Ingredients

  • 2 cups packed fresh basil
  • 2 cups packed spinach
  • 1 cup walnuts
  • 4 garlic cloves, peeled
  • 2 tablespoons water
  • 3 tablespoons nutritional yeast flakes
  • 2 tablespoons lemon juice
  • 3 tablespoons nutritional
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the basil, spinach, walnuts, and garlic in a food processor.  Pulse until the mixture is coarsely ground.
  2. Add the water, lemon juice, nutritional yeast flakes, salt, and pepper, and continue pulsing until you have a thick paste.  Serve.
