This no-fuss treat is everything you want in a dessert: rich, peanutty, and topped with a dreamy layer of chocolate. It’s so simple to make—just a quick crust and a silky topping, no baking required. - 1 1/2 cup rolled oats (not quick oats; gluten-free if necessary)
- 1 cup pitted dates, soaked
- 1 cup all-natural peanut butter (100 percent peanuts), divided
- 1/2 cup peanuts
- 1 cup vegan chocolate chips
Instructions
- Line a 9-inch square baking pan with parchment paper. set aside.
- In a food processor, process the oats and dates until you have a crumbly mixture. Add 1/2 cup of the peanut butter and the peanuts and pulse until the mixture holds together when shaped by your hands. If it seems too dry, add 1-2 tablespoons of plant-based milk to help bring the mixture together. Press and smooth the mixture into an even layer in the lined baking pan.
- Put the chocolate chips and remaining 1/2 cup of peanut butter in a small bowl and microwave in 30-second intervals until melted. Mix the melted peanut butter and chocolate until thoroughly combined nd pour the chocolate sauce over the peanut base.
- Place the pan in the refrigerator for 2 hours (or in the freezer for 1 hour) or until set.
- Cut into 12-16 bars and store in the refrigerator or freezer.
