This no-fuss treat is everything you want in a dessert: rich, peanutty, and topped with a dreamy layer of chocolate. It’s so simple to make—just a quick crust and a silky topping, no baking required. Whether you’re making it for a crowd or sneaking a piece from the fridge late at night, this is one of those recipes you’ll want on repeat.


Ingredients

  • 1 1/2 cup rolled oats (not quick oats; gluten-free if necessary)
  • 1 cup pitted dates, soaked
  • 1 cup all-natural peanut butter (100 percent peanuts), divided
  • 1/2 cup peanuts
  • 1 cup vegan chocolate chips

Instructions

  1. Line a 9-inch square baking pan with parchment paper.  set aside.
  2. In a food processor, process the oats and dates until you have a crumbly mixture.  Add 1/2 cup of the peanut butter and the peanuts and pulse until the mixture holds together when shaped by your hands.  If it seems too dry, add 1-2 tablespoons of plant-based milk to help bring the mixture together.  Press and smooth the mixture into an even layer in the lined baking pan.
  3. Put the chocolate chips and remaining 1/2 cup of peanut butter in a small bowl and microwave in 30-second intervals until melted.  Mix the melted peanut butter and chocolate until thoroughly combined nd pour the chocolate sauce over the peanut base.
  4. Place the pan in the refrigerator for 2 hours (or in the freezer for 1 hour) or until set.
  5. Cut into 12-16 bars and store in the refrigerator or freezer.
