Preheat oven to 375°F. Line a baking sheetwith parchment paper.
In a small bowl, mix flax meal and water. Set aside until thickened.
In a large mixing bowl, combine the milk, applesauce, coconut sugar, and vanilla. When the flax meal mixture has thickened, add this to the wet ingredients.
In another bowl, whisk together the oats, flour, baking soda, baking powder, cinnamon, nutmeg, and cloves. Mix in the raisins, chocolate chips, and walnuts. Add the dry mixture to the wet ingredients and mix until moistened. Do not ovemix, as this will make your cookies tough.
Drop spoonfuls of the cookie dough onto the prepared baking sheet. I like to use a wet spoon to flatten and spread the cookies a bit. Bake for 10-12 minutes, until dry to the touch and slightly golden.
