Ingredients
- 1 1/2 cup rolled oats (not quick oats; gluten-free if necessary)
- 1 cup pitted dates, soaked
- 1 cup all-natural peanut butter (100 percent peanuts), divided
- 1/2 cup peanuts
- 1 cup vegan chocolate chips
Instructions
- Line a 9-inch square baking pan with parchment paper. set aside.
- In a food processor, process the oats and dates until you have a crumbly mixture. Add 1/2 cup of the peanut butter and the peanuts and pulse until the mixture holds together when shaped by your hands. If it seems too dry, add 1-2 tablespoons of plant-based milk to help bring the mixture together. Press and smooth the mixture into an even layer in the lined baking pan.
- Put the chocolate chips and remaining 1/2 cup of peanut butter in a small bowl and microwave in 30-second intervals until melted. Mix the melted peanut butter and chocolate until thoroughly combined nd pour the chocolate sauce over the peanut base.
- Place the pan in the refrigerator for 2 hours (or in the freezer for 1 hour) or until set.
- Cut into 12-16 bars and store in the refrigerator or freezer.

Question: How long should the dates be soaked, and in what, hot water or regular temp water? Thanks so much. I’m looking forward to making these as an alternative to the store-bought pb cups we get.
I soak them in warm water for 10-15 minutes or until softened. You can also skip soaking, but it makes processing a bit easier. Enjoy!
