Oatmeal Raisin Mookies
Ilike to call these cookies “mookies” since they are a cross between a muffinand a cookie. Without the added butters or oils these cookies don't meltand spread like a typical high-fat cookie. Instead, they have a tender,cakelike texture.
Ingredients
- 1 tablespoon flax meal or chia seeds
- 2 tablespoons water
- 6 tablespoons plant based milk
- 1/3 cup unsweetened applesauce
- 1/4 cup coconut sugar
- 2 teaspoons pure vanilla extract
- 1 1/4 cup rolled oats
- 1 cup whole wheat pastry flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/2 cup raisins
- 1/2 cup vegan chocolate chips
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 375°F. Line a baking sheetwith parchment paper.
- In a small bowl, mix flax meal and water. Set aside until thickened.
- In a large mixing bowl, combine the milk, applesauce, coconut sugar, and vanilla. When the flax meal mixture has thickened, add this to the wet ingredients.
- In another bowl, whisk together the oats, flour, baking soda, baking powder, cinnamon, nutmeg, and cloves. Mix in the raisins, chocolate chips, and walnuts. Add the dry mixture to the wet ingredients and mix until moistened. Do not ovemix, as this will make your cookies tough.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet. I like to use a wet spoon to flatten and spread the cookies a bit. Bake for 10-12 minutes, until dry to the touch and slightly golden.
