These Thai-inspired tofu wraps are fresh, creamy, and full of bright flavor. Extra-firm tofu is gently crumbled and tossed with peanut butter, lime, and a touch of heat, then folded into whole-wheat wraps with crunchy vegetables. No cooking required, making this an easy, satisfying lunch or light dinner that comes together in minutes.


Ingredients

  • (14-ounce) block extra-firm tofu
  • 1/4 cup natural peanut butter (100% peanuts)
  • 1 tablespoon low-sodium soy sauce
  • 1 1/2 tablespoons fresh lime juice
  • 1/4 teaspoon garlic powder
  • 2 teaspoons Sriracha (more or less to taste)
  • 1/3 cup diced red bell pepper
  • 1/4 cup sliced green onion
  • 1/4 cup chopped fresh cilantro
  • 6 whole-wheat tortilla wraps
  • 2 cups sprouts or shredded vegetables of choice

Instructions

  1. Prep the Tofu: Drain the tofu and gently press it between layers of paper towels to remove excess moisture.
  2. Make the Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, garlic powder, and Sriracha until smooth.
  3. Combine: Crumble the tofu directly into the bowl. Add the bell pepper, green onion, and cilantro. Stir with a fork until well mixed and lightly crumbly.
  4. Assemble: Spoon a generous portion of the tofu mixture into the center of each tortilla. Top with sprouts or your favorite crunchy vegetables. Roll up tightly and serve.

Notes

This Thai tofu filling is also delicious as a sandwich spread. Try it on toasted whole-grain bread with fresh basil or sliced cucumber.
