Description

A velvety, creamy tomato soup made with raw cashews, savory miso, and Italian herbs for rich, comforting flavor. Blended until silky smooth, this cozy bowl is nourishing, satisfying, and perfect with a slice of crusty bread for dipping.


Ingredients

  • 1 onion, diced
  • 28 oz can of diced tomatoes
  • 3/4 cup raw cashews
  • 1/2 cup tomato paste
  • 2 tablespoons miso paste
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 1/2 teaspoon Italian seasoning
  • 3 tablespoons coconut sugar
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • Water, for thinning

Instructions

  1. Sauté: In a large pot, sauté the onion in a small amount of water until tender and translucent.
  2. Blend: Transfer the cooked onion to a high-speed blender. Add the remaining ingredients and blend on high until completely smooth and creamy.
  3. Simmer: Pour the soup back into the pot and simmer on medium-low until bubbly and slightly thickened. Add water as needed to reach your desired consistency.
